Spinach is a leafy green vegetable highly valued in world cuisine due to its delicate flavor and multiple health benefits. Originating in Persia, spinach was introduced to Europe during the Middle Ages and quickly became popular in different regions. In Latin America, the preparation of spinach varies by country; for example, in Mexico it is commonly consumed in stews or quesadillas, while in Argentina it is usually prepared with white sauce or as part of fillings for empanadas. In other Latin American countries, such as Colombia and Venezuela, it is simply known as "spinach" and is used in both soups and main dishes. This versatility has made it a basic ingredient that transcends borders and culinary styles.
How to Prepare Spinach
To begin, cook the spinach for approximately 5 minutes in a heavy enameled pot.
After squeezing them thoroughly to remove as much water as possible, chop them into large pieces and place them in an enameled saucepan with the softened butter and other seasonings.
Stir over very low heat until the butter is almost absorbed.
Add one small garlic clove, crushed in a garlic press, 1/2 cup of pine nuts, and 1/2 cup of seedless raisins.
Cover and cook over very low heat for approximately 5 minutes, stirring constantly.
Serve on a hot vegetable dish.
If desired, you can add a cup of chopped smoked ham for a special touch.
