Acorn squash is a variety of squash highly valued in Latin American cuisine and other parts of the world for its sweet flavor and firm texture. Native to North America, this squash is primarily cultivated in the United States and Mexico, and is known for its shape which resembles an acorn, hence its name. In different Latin American countries, it may have similar or variant names, but it is generally known as "calabaza bellota" or simply "squash". This squash has been part of the traditional diet since pre-Columbian times and is used in numerous recipes, especially in autumn and winter, when it is in season.
In some regions of Latin America, it is also called "winter squash" due to its long shelf life. In countries such as Argentina, Chile, and Colombia, acorn squash is highly valued for preparing both sweet and savory dishes due to its naturally sweet flavor and creamy texture when cooked.
