How to prepare Spiced Pear Butter

To prepare this exquisite spiced pear butter, begin by combining the peeled and chopped pears with the apple juice in a large cast-iron pot.

Then, tie the split cinnamon sticks, fresh ginger, allspice, and cloves in a piece of cheesecloth to create a spice bag.

Add this bag to the pear and apple juice mixture.

Bring everything to a boil, cover the pot, reduce the heat, and let it simmer for 45 minutes to 1 hour, or until the pears are completely tender.

Afterwards, drain the pears and discard the spice bag.

Mash the pears or process the mixture in a food processor until a smooth and homogeneous consistency is achieved.

Return this pear puree to the cast-iron pot and add sugar to taste.

Cook the mixture uncovered over medium heat for 30 to 40 minutes or until thickened, stirring frequently to prevent sticking.

Finally, remove the pot from the heat and quickly pour the hot mixture into sterilized, hot jars, leaving about 1/4 inch of headspace at the top.

Wipe the rims of the jars well to ensure a good seal.

Immediately cover with metal lids and screw the bands on firmly.

To properly preserve the pear butter, process the jars in a boiling water bath for 5 minutes.
