Scallops are a highly prized delicacy in global cuisine, especially in coastal regions where seafood products are used to their fullest. Originating from the cold waters of the Atlantic Ocean, they have been a fundamental part of the diet of many cultures, from the fishermen of Europe to the indigenous communities of North America. In Latin America, although they are not as common an ingredient as in Europe, scallops have also found their place in the most sophisticated and gourmet kitchens.
In different Latin American countries, scallops are mainly known as "vieiras" or, in some regions, are called "conchas de abanico" (fan shells) due to the characteristically wide, striped shape of their shell. Their delicate flavor and soft texture make them ideal for simple or elaborate preparations, where they can be combined with ingredients that enhance their marine aroma without overpowering it. Simple supreme scallops are an example of how the combination of common ingredients can result in an elegant and very tasty recipe.
