Scalloped potatoes

Scalloped potatoes is a traditional dish with a rich history that dates back to European culinary influence, particularly French. The term "escalope" in French refers to a technique for cutting food into thin slices, and this recipe adapts that idea to prepare thin layers of potatoes. In Latin America, this recipe can be found under different names and variations, such as "papas gratinadas" in Mexico or "papas a la crema" in countries of the Southern Cone. Its popularity lies in the combination of soft layers of potato with a creamy cheese sauce that makes it a highly appreciated side dish or main course for family gatherings and special occasions.

This dish stands out for its simplicity and the possibility of adding various ingredients, such as peppers or different types of cheeses, adapting to the regional taste of each Latin American country. Although its origin is European, scalloped potatoes have become a very representative and comforting recipe in Latin American cuisine.

How to Make Scalloped Potatoes

For the sauce, melt butter in a saucepan, then mix in the flour.

Cook over moderate heat and slowly add the milk while stirring.

Season with salt and pepper and continue cooking until the sauce is smooth and comes to a boil.

Reduce the heat and add the cheese, stirring, until the cheese is incorporated, then add the green pepper/bell pepper mixture, mix, and remove from the heat.

Grease a baking dish and fill it with alternating layers of potatoes and sauce.

Bake in a moderate oven, at 350 degrees, until the potatoes are cooked, approximately 1 to 1-1/2 hours.

The potatoes can be turned with a spoon to ensure even cooking.
