Greek spinach triangles, also known as spanakopita in Greece, are a classic of Mediterranean cuisine that has won over palates all over the world. This delicious savory appetizer has its roots in traditional Greek cooking, where phyllo dough sheets are filled with a mixture of spinach, feta cheese, and aromatic herbs. Its popularity has transcended borders, adapting to local kitchens, but always maintaining the essence of the Greek tradition.

Refrigerate the mixture for at least 1 hour to allow the flavors to blend and the preparation to set.
Open the package of phyllo dough and cut a 2" wide strip, making sure to cut through all the layers.
Cover the remaining dough with a damp cloth to prevent it from cracking while you work.
