Herb gougères

Gougères are a delicious appetizer originating from the Burgundy region of France. They are small baked pastries made from choux pastry and cheese, traditionally served warm as an accompaniment at gatherings or festive appetizers. In different Latin American countries, although they don't have a specific different name, they are simply known as "cheese fritters" or "cheese puffs" in some regions, varying slightly in ingredients but maintaining the essence of the fluffy and savory snack.

This dish has become a classic of French cuisine, appreciated for its light texture and intense cheese flavor. Fresh herbs like parsley, dill, and chives, which are added to the dough, provide an aromatic touch that further enhances their flavor, making these gougères irresistible for any special occasion or for a simple appetizer at home.

How to Make Gougères with Herbs

In a 2-quart saucepan, heat 1 cup of water, butter, and salt until boiling.

Remove from heat and add all the flour at once, beating until smooth.

Return the saucepan to medium heat.

Cook, stirring constantly, until the dough is firm and pulls away from the sides of the saucepan, about 5 minutes.

Remove from heat and add the eggs, one at a time, beating well after each addition.

Incorporate 2/3 cup of Swiss cheese, Parmesan cheese, parsley, dill, and chives.

Lightly grease one or two baking sheets.

Place large spoonfuls of dough on the baking sheet, forming a 15 cm ring or two 8 cm rings, with the dough just touching.

Sprinkle with the remaining 1/3 cup of Swiss cheese.

Bake at 425 degrees F for 25 minutes or until puffed and golden brown.

Serve hot.
