German-style potato pancakes, known in Germany as "Kartoffelpuffer" or "Reibekuchen," are a delicious traditional preparation dating back several centuries. This recipe is part of German culinary culture and has spread to various regions, adapting to local ingredients and tastes. In Latin America, although they are not as common under this name, there are similar variants that use grated potatoes as a base, known in some countries as potato patties or latkes, especially in the Jewish community. This dish is characterized by its crispy texture on the outside and soft on the inside, and is traditionally served with applesauce or sour cream.
How to Make German-Style Potato Pancakes
Keep the potatoes covered in cold water until you are ready to grate them in the food processor.
Place the medium grating blade in the food processor and grate the potatoes and the onion.
Dry the potatoes and onion between sheets of paper towels.
In a large bowl, combine the potato mixture with the eggs, flour, baking powder, parsley, and salt.
In a large skillet, heat 1/8 inch of vegetable oil until hot.
Pour 1/3 cup of the potato mixture, flatten with the back of a wooden spoon, and fry until crispy and golden on both sides, about 3 minutes per side.
Drain on paper towels and keep warm in a 100-degree oven.
Serve with applesauce.
