How to Prepare Chinese-Style Chicken Noodle Soup

This soup changes based on the ingredients available in my refrigerator or pantry.

It takes approximately 20 minutes from start to table.

Bring 2 cups of water to a boil.

Add chicken broth.

After the broth boils, add the seasoning packet included with the instant ramen.

While the broth is boiling, add 1 raw chicken breast, the chopped vegetables, and the raw egg.

The egg will cook into threads.

Just before serving, add the noodles and the peas, then the sesame oil and the scallions.

Do not let the soup sit for too long because the vegetables need to remain slightly crunchy, softly cooked.

If you use leftover meat in your soup, only add it at the end because it just needs to be reheated.

You can always add another can of chicken broth if the soup is too thick or if you prefer more broth.

You can vary the soup with different types of available Chinese vegetables.

Add a bit of garlic and a pinch of spicy Chinese mustard.

If you use strong vegetables like broccoli, cut them small and do not overcook them to avoid a strong flavor.

Remember that the noodles are already cooked and do not need to be boiled, they just need to absorb the moisture from the broth, which thickens the soup.
