How to Make Mission-Style Meatless Chili

Ingredients: Safflower oil, garlic clove, green bell pepper, celery, onion, carrot, zucchini, tomatoes with juice, red beans, tomato sauce, water, chili powder, hot sauce, basil, oregano, and black pepper.

Steps:

Topping: mix corn, chopped scallions, and shredded cheddar cheese or Monterey Jack cheese, or a combination, as you prefer; it is optional.

In a Dutch oven or a 4-5 quart saucepan, heat the safflower oil.

Sauté the garlic, green bell pepper, celery, onion, carrot, and zucchini until they are crisp-tender, about 3 minutes.

While this mixture is cooking, add the other ingredients: tomatoes with juice, red beans, tomato sauce, water, chili powder, hot sauce, basil, oregano, and black pepper.
