Chicken casserole is a very popular traditional dish in several Latin American countries, especially in Chile, where it is considered a fundamental part of home cooking. Its origin dates back to peasant preparations, where simple but nutritious ingredients were combined to create hearty and comforting meals. In other Latin American countries, similar dishes may have different names, such as "chicken stew" or simply "cazuela," although the recipes may vary in ingredients and techniques. This type of casserole is usually prepared as a hearty stew that includes vegetables and protein, ideal for sharing with the family.
This particular recipe enhances the flavor of the chicken with the tenderness of broccoli and the creaminess of the soup and mayonnaise mixture, adding a special touch with curry powder and lemon juice. The result is a creamy casserole, topped with melted cheddar cheese and a touch of butter, which is baked until it achieves a golden and appetizing texture, perfect for a homemade and flavorful meal.
