California rarebit

Rarebit is a recipe that has its origins in Great Britain, where it is known as Welsh Rarebit. This dish traditionally consists of a melted cheese mixture with ingredients such as beer or wine, which is served on toasted bread. In Latin America, although it is not very common under its original name, in some countries you can find similar versions under names like "tostadas con queso fundido" (toasted tortillas with melted cheese) or "pan con queso gratinado" (bread with gratinéed cheese). Each region adapts the recipe with local ingredients, resulting in very tasty variations.

California Rarebit emerges as a modern and sophisticated version of this classic recipe, incorporating fresh ingredients and different elements to give it a unique touch. This variant uses Monterey Jack cheese and a hint of flavor with dry white wine, combined with mushrooms and spices, creating an ideal dish for cheese lovers and deep textures in gastronomy.

How to prepare California Rarebit

Melt 1 tablespoon of butter in the top of a double boiler.

Add the wine and heat, then incorporate 2 cups of the cheese.

Heat until melted.

Add a little of the cheese mixture to the beaten egg and then return the egg mixture to the cheese.

Cook and stir for about 1 minute.

Add the Worcestershire sauce and basil, set aside keeping the sauce hot.

Sauté the mushrooms in the remaining butter until tender, then sprinkle with garlic powder and remove from heat.

Place the toasted bread triangles on individual heatproof plates.

Pour the sauce over the toasted bread and then top with the sautéed mushrooms.

Sprinkle with the remaining cheese and broil until bubbly.
