How to Prepare Almond Wild Rice
Ingredients: Wild rice, olive oil, onions, scallions, shallot, green bell peppers, sliced almonds, sliced water chestnuts, fresh mushrooms, chicken broth, salt, and black pepper.
Heat the olive oil in a large skillet over medium heat.
Add the onion, scallions, shallots, and green bell pepper and sauté until soft.
Add the rice and sauté for 2 to 3 minutes more.
Add the almonds, water chestnuts, and mushrooms.
Transfer the mixture to a baking dish.
Add the boiling chicken broth and season with salt and pepper to taste.
Cover the dish and bake at 350 degrees for 1 hour and 15 minutes, or until the liquid is absorbed and the rice is tender.
