Potato patties

Potato cakes are a traditional preparation with roots in various regions of Latin America, although they are especially popular in countries like Colombia, Venezuela, and Mexico. In each country, this dish goes by different names; for example, in Colombia they are known as "torticas de papa," while in Mexico, in some regions, they are simply called "pastelitos de papa" or "tortitas de papa." Their origin lies in the need to make use of potatoes in a simple and nutritious way, creating a side dish or main course that combines the tuber's soft texture with a crispy exterior.

Traditionally, these cakes are cooked with basic and easily accessible ingredients, such as potatoes, salt, and some type of oil for frying. Although some variations add additional ingredients like cheese or herbs, the classic recipe maintains the simplicity that allows the natural flavor of the potato to shine. They are ideal to accompany stews, meats, or even as a snack at family gatherings, and their versatility has kept them relevant in the popular gastronomy of Latin America.
