You can freeze a 2-inch stick of pepperoni in the freezer, and cut the amount you need with a good, sharp, and hot knife.
If you have a bag of shredded mozzarella in the freezer, it's easy to take just the amount you need.
Always keep a can or jars of natural tomato sauce in the house.
