The pretzel is a type of bread originating from Europe, with roots dating back to the Middle Ages, especially in regions like Germany and Austria. Traditionally, pretzels have a characteristic bow shape, which some say symbolizes crossed arms in an attitude of prayer. In Latin America, this bread is enjoyed in different ways and under different names; in some countries like Mexico and Argentina, pretzels are also popular, although they are often consumed as savory or sweet snacks. In Chile, for example, they are commonly known as "pretzels" or "braided bread" and are often very present in New Year's celebrations, as a symbol of good luck and prosperity for the coming year.
This recipe is a special version of pretzels for welcoming the New Year, with a sweet glaze and almonds that make them irresistible, combining tradition with a festive and delicious touch.
How to Make New Year's Pretzels
Heat the milk and butter until they are very warm.
Mix the yeast, salt, sugar, and 1 cup of flour.
Slowly incorporate the mixture into the warm milk.
Beat for 2 minutes to activate the yeast.
Add the eggs and 1 cup of flour.
Beat for an additional 2 minutes until everything is well integrated.
Add enough flour to form a soft dough.
Knead until the dough is smooth and elastic, approximately 5 minutes.
Place the dough in a greased bowl.
Let it rest in a warm place until it doubles in volume, approximately 1 hour.
Press the dough to release the air and let it rest again until it doubles in size.
Divide the dough into two equal parts.
Form the pretzel by rolling the dough into a rope approximately 75 cm long and 3.8 cm in diameter.
Cross the ends, leaving a large loop in the center.
Fold the loop back over the crossed ends to form the classic pretzel shape.
Repeat the same process with the remaining dough.
Place the pretzels on greased baking sheets.
Let them rise for 15 more minutes so they increase in size a bit.
Bake at 190 degrees Celsius for 25 to 30 minutes or until golden and crispy.
Cool the pretzels on racks to prevent them from getting soggy.
For the glaze, mix powdered sugar, water, and vanilla extract until a smooth, liquid consistency is achieved.
Carefully spread the glaze over each pretzel and sprinkle with chopped almonds to taste.
