How to Make Maine Fish Chowder

Ingredients: Salt Pork, Raw Potatoes, Onions, Salt, Haddock Fillets, Milk, Butter, Pepper.

Step 1: Fry salt pork to render all the fat in a heavy pot and then remove it.

Step 2: Add potatoes, onions, and 1/2 teaspoon of salt.

Step 3: Cover with hot water and cook over medium heat, covered, for 15 minutes, until the potatoes are just tender.

Step 4: Do not overcook.

Step 5: Meanwhile, cut the fish into large chunks and place it in another saucepan.

Step 6: Add boiling water to cover and 1 1/2 teaspoons of salt.

Step 7: Cook slowly, covered, until the fish is tender when pierced with a fork, approximately 15 minutes.

Step 8: Remove from heat.

Step 9: Strain and reserve the liquid.
