How to prepare Tom Ka Kai soup

In a medium to large saucepan, bring all the ingredients except the garlic, red chili, ginger root, cilantro, chicken, and half-and-half cream to a boil.

Meanwhile, finely chop the remaining ingredients in a food processor, then add them to the pot.

Chop and boil the chicken pieces in the soup for about 5 minutes or until fully cooked.
