Fresh summer salad

The fresh summer salad is a light and refreshing dish that has gained popularity in various regions of Latin America during the warm seasons. Its origin dates back to the need to utilize local fruits and vegetables in practical and nutritious recipes, ideal for combating the heat. In different Latin American countries, this salad may have various names; for example, in Mexico it is simply known as "fruit and fresh vegetable salad," while in Argentina and Chile it is commonly called "fresh summer salad." The combination of crunchy and juicy ingredients along with an aromatic dressing makes it a perfect option to accompany meals or to enjoy as a light dish.

How to Prepare Fresh Summer Salad

Ingredients: Sliced pineapple, firm ripe tomatoes, cucumber, mint.

Steps:

First, prepare the mint dressing by mixing 2 tablespoons of finely chopped mint with 1/3 cup of white vinegar and 1/4 cup of oil. Add salt and pepper to taste.

Cut the pineapple slices into large chunks to preserve their texture and juicy flavor.

Score the cucumber with a fork so the dressing penetrates better and then slice it thinly.

In a bowl, combine the chopped tomatoes, pineapple, and cucumber.

Pour the prepared dressing over the ingredients and mix well so everything is infused with the flavor.

Refrigerate the mixture for a while so the salad is cool and the flavors meld together.

Before serving, sprinkle with chopped mint to add an extra aroma and freshness.

To prepare the mint dressing correctly, place the mint and vinegar in a small saucepan and bring to a boil.

Reduce the heat and simmer for 1 minute.

Remove from the heat and let it cool.

When cold, strain the mixture into a jar with a screw-top lid, add the oil, and season to taste with salt and pepper.

Shake the jar well to integrate all the dressing ingredients.
