Fluffy zucchini and ricotta muffins are a delicious variation of the classic muffins, combining the softness of zucchini with the creaminess of ricotta cheese. This type of preparation originates from European pastry, especially in Spain, where muffins are very popular as a sweet snack to accompany breakfast or an afternoon snack. In Latin America, these small delicacies are simply known as "magdalenas" in countries like Mexico, Argentina, and Colombia; in other places, they may be called "muffins" or "queques" depending on the region and culinary influence.
Historically, muffins originated in France, named in honor of Magdalena, a young pastry chef who popularized them. Over time, the recipe was adapted and enriched with local ingredients, such as zucchini and ricotta, which provide a moist texture and a mild flavor, ideal for those looking for healthy and nutritious options without losing the charm of the traditional sweet treat. Furthermore, in Latin American countries, they are enjoyed with various variations, including fruity flavors, spices, and different flours, showcasing the versatility of this recipe.
