How to Prepare Delicious Vegetable Pancakes

Ingredients: Carrots, potatoes, zucchini, onion, garlic cloves, whole corn, tomatoes, fresh herbs, salt and pepper, cumin, curry powder, paprika.

Steps:

Mixture: 3 eggs, 1 tsp of flour, 1 tsp of baking powder, oil for frying and squeeze out all the excess moisture from the grated vegetables.

Mix the vegetables, herbs, and spices well.

Lightly beat the eggs and mix in the flour and baking powder.

Add to the vegetables and let rest for 30 minutes.

If there is excess liquid on the surface, remove it with a spoon.

Heat oil in a pan, add large spoonfuls of the fritter mixture, leaving enough space for them to expand.

Do not press down on the fritters.

Cover with a lid and cook for about 10 minutes over medium heat.

Flip and cook the other side until golden brown.

Drain them on paper towels.
