In Latin America, although the recipe varies, the base is always the combination of fresh vegetables with aromatic spices and vinegar to create a side dish that highlights and complements main dishes like meats, rice, or stews. How to Prepare Indian Delight
To begin, slice the cucumbers and green tomatoes, making sure to get uniform cuts. Then, peel and slice the ripe tomatoes as well, setting them aside to facilitate mixing later.
Remove the seeds from the sweet green and red bell peppers and chop them finely. Peel and finely chop the onions, adding them to the rest of the vegetables.
Mix all the vegetables with the pickling salt and let the mixture rest overnight, which will help them release their juices and integrate the flavors.
The next day, drain the vegetables and add 2 cups of vinegar along with the water. Slowly bring this mixture to a boil to combine the liquids with the pickled vegetables.
Drain again to remove excess liquid.
In a separate container, mix the sugar, cinnamon, turmeric, cloves, and allspice until a smooth paste is obtained, using a bit of vinegar to help with the mixing.

Finally, pour the Indian Delight into previously heated jars and seal them airtight to preserve it and enjoy it as a delicious accompaniment to your meals.
