How to Make Cucumber and Potato Soup

Peel the cucumber and cut it lengthwise.

Scoop out the seeds with a spoon and discard them.

Chop the cucumber into cubes.

In a heavy 2 1/2-quart saucepan, boil the potatoes in salted water until very tender.

Pour the potatoes and the cooking liquid into a colander or food mill placed over a large bowl.

Pass the potatoes through.

Return to the saucepan.

Add pepper, cream, milk, grated onion, and the cucumber.

Simmer for approximately 5 minutes or until the cucumber is tender.
