How to Prepare Colorful Rice and Tuna

Ingredients: Rice, Chicken Broth, Butter, Tuna, Lemon Juice, Onion, Red Bell Pepper, Green Bell Pepper, Salt and Pepper.

Melt one tablespoon of butter in a one-quart saucepan, add the rice and stir until all the grains are coated.

Add the chicken broth to the rice, cover, and place the saucepan on a burner over very low heat.

After the rice has cooked for 15 minutes, turn off the heat under the rice, but do not remove the lid.

Melt one tablespoon of butter in a skillet.

Heat the onion and bell peppers until they are soft.

Add the lemon juice and the drained can of tuna.

Heat the mixture for an additional 3 to 5 minutes or until the tuna is warm.

Remove the lid from the rice and mix it with the warm onion, bell pepper, and tuna mixture, and serve.

Season with salt and pepper to taste.
