How to Prepare Civil War Cake
Ingredients: Raisins, Water, Sugar, Shortening, Cake flour, Salt, Cinnamon, Baking soda, Nutmeg, Cloves, Walnuts.
Combine raisins, sugar, 1 cup of water, shortening, salt, and spices in a saucepan.
Bring to a boil, simmer for 3 minutes, stirring occasionally, then cool until lukewarm, then add the other cup of water.
Dissolve baking soda in 2 teaspoons of water, set aside.
Incorporate the sifted and measured flour into the raisin mixture and beat until smooth.
Add the dissolved baking soda at the end.
Pour into a greased and floured 13x9 inch pan and bake for 50-55 minutes at 350 degrees.
It can also be baked in a tube pan.
Serve with whipped cream or caramel icing.
For the icing: Combine 3/4 cup of brown sugar, 1/2 cup of water, 1/2 teaspoon of salt in a saucepan.
Cook for 6 minutes, stirring frequently.
Cool until lukewarm and add 3 tablespoons of butter.
Then, gradually add 2 1/4 cups of sifted confectioners' sugar, beating until smooth.
Incorporate 1 teaspoon of vanilla and spread over the cake.
