Sour cream chocolate layer cake is a traditional recipe that has gained popularity in various parts of Latin America. Its origin dates back to European recipes adapted by Mexican and Central American families, where the use of sour cream in desserts provides a moist texture and a slightly tangy flavor that balances the sweetness of the chocolate.
In different Latin American countries, this cake can be found under names such as "Torta de chocolate con crema ácida" in Mexico, "Torta de capas de chocolate" in Argentina, and "Pastel de crema agria y chocolate" in Colombia. Each region adds small personal touches, but the essence of the cake remains. This recipe is perfect for celebrations and special occasions, as it combines the richness of chocolate with the smoothness and creaminess of the frosting made with sour cream.
How to Make Sour Cream Chocolate Layer Cake
In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
Add the shortening, sour cream, vanilla, eggs, water, and chocolate to the dry ingredient mixture.
Beat with an electric mixer on low speed, scraping the bowl constantly, for 1/2 minute.
Increase the speed to high and beat for an additional 3 minutes, scraping the bowl occasionally.
Pour the batter into two greased and wax paper-lined 9-inch round cake pans.
Bake in a preheated oven at 350 degrees Fahrenheit for 35 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans on wire racks for 10 minutes.
Carefully remove from the pans and let cool completely on the wire racks.
For the sour cream and chocolate frosting, combine in a bowl the softened butter or margarine, powdered sugar, and sour cream. Mix well.
Add the melted and cooled chocolate, along with the vanilla, and beat until the mixture is smooth.
Place one cake layer on the serving plate and spread with sour cream and chocolate frosting.
Place the second cake layer on top and cover the sides and top with the remaining frosting.
For a more attractive finish, take the layer that is less level and trim it with a sharp knife to make it flat.
Place that trimmed layer with the flat side down, spread frosting between the layers, and place the other layer right side up.
Finish frosting the cake and enjoy this delicious combination of flavors and textures.
The trimmings from leveling the cake are ideal for tasting as a little reward for the cook or for the children.
