Tropical chicken skewers

Tropical chicken skewers are a delicious culinary expression that combines fresh and juicy flavors, typical of tropical regions. Although their popularity has grown in many countries, their origin is deeply rooted in Caribbean tradition, where local ingredients such as pineapple, papaya, and lime juice are used to create vibrant and flavorful dishes.

In Latin America, this preparation may have different names depending on the country. For example, in Mexico and Central America, they are usually called "brochetas," while in countries like Argentina or Chile, the terms "pinchos" or "brochetas" are common. In the Caribbean, some variants are simply known as "antipasto" or "Caribbean pinchos." Regardless of the name, the essence of this recipe remains: a perfect mix of proteins and tropical fruits that enhance the flavor of the chicken.

These skewers reflect the influence of Creole cuisine and its marinating techniques, as well as the freshness of native ingredients that represent the region's gastronomic richness. They are ideal for barbecues, family gatherings, or as a main dish that invites culinary adventure with every bite.

How to Prepare Tropical Chicken Skewers

To begin, combine lime juice, vegetable oil, and honey in a shallow dish.

Add the chicken medallions to this mixture and gently toss to coat them well with the marinade.

Cover the dish and let it marinate in the refrigerator for 8 hours or overnight, stirring occasionally to maximize the flavor.

Once marinated, remove the chicken from the marinade, reserving the marinade for later.

On six skewers, alternate pieces of chicken, white pearl onion, green bell pepper, papaya, and chunks of fresh pineapple, achieving a balance of colors and flavors.

Coat the grill with cooking spray to prevent the skewers from sticking during cooking.

Place the grill over medium-high heat coals for even and efficient cooking.

Finally, place the skewers on the grill and cook for 15 to 20 minutes or until done, turning and basting them frequently with the reserved marinade to keep them juicy and full of flavor.
