How to Prepare Garlic and Pine Nut Rice

Remove all the cloves from the head of garlic.

Take a small saucepan and boil approximately one cup of water.

Add the garlic cloves and let them simmer for about 1 minute - drain, peel the garlic, and set aside.

In a small saucepan, melt the butter together with the olive oil over medium heat.

Reduce the temperature to low, then add the peeled garlic cloves to the butter mixture.

Stir well.

Sauté slowly over very low heat until they are tender and golden, at least 20 minutes, stirring and checking occasionally to ensure they do not burn.

Remove the cloves from the pan - pour any remaining butter into a wide skillet.

Mash the garlic well with a fork.

Heat the "garlic juices" in the wide skillet.

Incorporate the mashed garlic.

Add the cooked rice and pine nuts.

Sauté, stirring and mixing, until the rice is hot and has absorbed the butter.

Season with salt and freshly ground pepper.
