This recipe reflects the European influence on local cuisine by combining ingredients like mayonnaise and horseradish with fresh, native products, such as arugula, adding a distinctive and refreshing touch.

How to Prepare Beef, Apple, and Arugula Appetizers

To begin, combine the mayonnaise, horseradish, 2 teaspoons of the lemon juice, and plenty of black pepper.

Thoroughly mix the apple with the remaining lemon juice to prevent it from oxidizing.

Cut the beef roast into strips approximately 2.5 cm (1 inch) wide and 12 to 18 cm (5 to 7 inches) long.

Place an apple slice and a few arugula leaves on the short end of each strip — they should overhang the edges — and put about 1/2 teaspoon of the horseradish cream on top.

Roll it up and secure it with a toothpick.

Wrap well and refrigerate until ready to serve.

Serve cold to fully enjoy the freshness and combination of flavors.
